As you both have probably guessed by now, it’s summer time! Which, for me, translates into sandwich + Netflix in bed time!! (Don’t worry, work starts on Monday ha ha) I’ve been pretty lazy, honestly, but not too lazy to make an delectable sammich 🙂 I’ve been really into cold cuts lately…

The secret is definitely in the spreads; I never thought of using two different ones, but they add some pizzazz for sure 😛 With the sandwich, I had some grape juice, a peach, and some pepper jack string cheese. Perfect lunch!
Syster 1, get ready for sandwiches when you visit this weekend! Syster 3, we’re gonna miss you double 😦 But don’t be too jealous, it’s really hot in California right now, which is why I like to spend most of my day huddled in my air-conditioned bedroom heehee.

I didn’t have the red pepper or vinegar, but a splash of oyster sauce added to the greens put in a bit of Asian flavor 🙂 The recipe is also a bit salt-heavy, so I only added salt to the greens, and I only had one egg. Also, I didn’t have collard greens, so I just used a bag of spinach instead, which turned out pretty well. It was delicious and easy to make — the perfect breakfast to start off a day of essay writing.

I did it! I made a Kale Avocado Salad worthy of Mom’s 🙂 I forgot to ask her how to make it, so I borrowed the recipe from here. Whoo! It was delicious; be sure to add enough lemon/lime juice and salt to taste so they can soften the kale leaves. I mushed it all up in a bag to minimize mess, but I didn’t eat it out of the bag like Mom does because I don’t have the same strong plastic bags she does haha. Instead, I just mushed it up and transferred it to a bowl. Delicious! Even better when I let it sit in the refrigerator for a while. Hope y’all enjoy it!
I’m going to commit to making either my favorite lentils with sausage recipe or trying Mom’s delicious kale and avocado salad this week! Not sure which one I’ll have time for (lentils + sausage is a wee bit more time-consuming), so stay tuned; it’s a surprise 🙂 I’ve been collecting sooo many recipes lately, and I can’t wait to try them…Hokay! I’ll do my best to try a new recipe and post about it every two weeks. I’m knee deep in midterms, papers, and presentations, so any break from work is welcome. Especially when it doesn’t include me being a slugabed all day hehehe.

Hi systers dearest!
I have no real excuse for not posting, especially since I live on my own now and we’re all busy. I guess it’s been hard for me to get time to myself lately. I have no pictures to post or recipes to share for now…My main source of energy has been water and the odd snack. However, I’m becoming proficient at omelets stuffed with spinach and cheese, as well as grilled cheese sandwiches! A personal favorite food right now? Vegetable cream cheese and cucumber sandwiches! Simple and delicious; a nice departure from grilled cheese or the typical turkey sandwich. I’m also a huge fan of lentils; easy to cook and very, very filling. You boil them with some garlic and salt, and afterwards, mash up the garlic and mix that in with caramelized onion bits. Add salt to taste, and it’s terrific with a sausage and other veggies.
I miss you both every day; when the going gets rough over here, I just think of my seesters on the East Coast. I’m temporarily without a phone, so Facebook is key for our communication ❤ I can’t wait to see you sillies…in December, I hope. I promise I’ll try to update in the next week or two with an actual home cooked meal!

So soon, and we’ll all be together again! Only 2 more nights until I see Sister 1 again, and 2 weeks until I see Sister 3, and 3 weeks until we all see each other again in Taiwan, home of delicious food galore. Can our stomachs handle it? I hope so. Well, here’s my Thanksgiving post, and I’m sorry it took me so long. That fall semester crunch after Thanksgiving break gets me every time!
Well, I celebrated meaningful Thanksgiving with my friends Lily, Noelia, and Nelson. Since we were staying in Lily’s apartment for the break, it made sense to gather our small potluck party there. Nelson brought the Martinelli, Lily was in charge of sweet potato fries and dip, Noelia covered the pumpkin pie, and I made mac&cheese (out of the box, yes). Also, frozen pizza…’Twas a feast in the eyes of us young undergrads, to be sure. Oh, and egg nog was had, of course. There may not be a happier Thanksgiving moment than eating the leftovers straight out of the bowl with your best friends.
Real Thanksgiving was spent working at one of President Nikias’s many holiday parties, this one a Thanksgiving feast for students.They paid us for the entire time we were there, even though we were let off 2 hours early. So I got paid to stuff my face with incredibly delicious Thanksgiving food? No complaints here.Turkey, mashed potatoes, stuffing, green beans, all that good stuff cooked to perfection. One more word: pie. I actually had a hard time moving at a normal pace afterwards…Ultimate food coma. Not unlike the one I’m prepared to experience every night we’re in Taiwan.

I’m finally going to tell you about the guacamole I made for a potluck at my friend’s apartment, since I know you guys were dying to hear about it. Ha ha. I used a recipe I got from a friend, who got it off this website: http://www.foodnetwork.com/recipes/alton-brown/guacamole-recipe/index.html
Since I didn’t feel like investing in a whole bunch of spices, I just used the avocados, onion, tomatoes, garlic, salt, and whatever other spices I could find in our cafe at the house. I got the amount of each recommended, except I’d say that the onion can get a little overpowering, so I’d recommend using maybe a third of the onion instead. The second time I made it, I used garlic powder instead of a clove of garlic, and it worked just as well. For the spices I could rummage up, I sprinkled in pepper, salt, and chili powder.
Basically, it ended up super delicious, and I’ll definitely be making it for the family when I come home 🙂
